3 cans of black beans (don't drain)
1 c. salsa, more if you like it spicier
1 c. chopped cilantro
1 lime, freshly squeezed
Bring to boil and simmer for about 15 min. while brown rice cooks. Before serving stir well and smash some of the beans for variety in texture.
Separate pot
3 c. water
1 1/2 c. brown rice
Bring to boil and simmer until tender.
Serve soup over brown rice, garnsih w/ monterey jack cheese and a spoonful of sour cream. Makes about 8 serving.
