Salad:
1/2 head purple cabbage, shredded
1/2 head cabbage, shredded
1 head Romaine lettuce, shredded
1 cup kale, shredded
1/2 seedless cucumber, julienned
1/2 red pepper, diced
large handful of snap peas, cut into thirds
3-4c chicken, cubed or shredded OR 2 cups chickpeas
1 can mandarin oranges
2 sliced green onions
handful cashews, chopped (optional)
chow mein noodles (optional)
1 can water chestnuts (optional)
cilantro for garnish
sesame seeds to sprinkle on top
Dressing:
6T veg oil
6T white vinegar
1/4c sugar
2tsp salt
1/2tsp pepper
1/2 tsp fresh ginger
1 T tamari sauce
1T sesame seeds
1- Combine all salad ingredients in a large bowl.
2- Small bowl, combine the dressing ingredients, whisk till mixed. Pour over salas right before serving and mix to coat.
