This blend is packed full of vitamins, minerals, protein, omega3, fiber and so much more! 1 oz of almonds alone gives you 12% of your daily allowance of protein, plus its full of vitamin E-a great antioxidant and fiber. Raw, sprouted pumpkin seeds rank "superfood" status with vitamin K, magnesium, iron and antioxidants just to name a few.
Take it one step closer to a squirrel diet and use raw nuts-even better, though you may need to add a little more salt.
1 1/2cups Lundberg's wild rice/brown rice blend (cooked according to directions-or just eyeball it in rice cooker and set it aside to cool slightly.)
1/4 of an apple, cut into small bite size peices
2 T craisins
1 T golden raisins
1-2T currants, dried
1/2c almonds, sliced or slivered-raw or roasted
1/2c cashews, raw or roasted
1-2T sesame seeds, raw or roasted
1/4c raw, sprouted pumpkin seeds (Try "Go Raw" brand-yum!)
1tsp EVOO (Extra virgin olive oil)
1/4tsp sea salt (plus more to taste)
1/8tsp pepper, freshly ground
juice of one lemon
1. Cook rice according to directions and allow to cool slightly in a large bowl. You want the rice to have absorbed all the water/be fully cooked so it is soft and so it does not become "goopey" when lemon juice is added.
2. Add all the "squirrel food" then toss it in the EVOO/salt combo
3. Add about half the lemon juice, stirring it around till well coated. Add more in increments to taste. You want the lemon to compliment the apples, dried fruit and nuts not overpower it.
(I pat a large helping into a kids' size bowl and turn it over onto each plate. It looks like you are ready to dig into a bird feeder! Let me know if you like it as much as I do.)
