A very light and refreshing soup.
3 cucumbers, peeled and seeded
1 lemon, peeled
1/4c pine nuts
4 cups pure water
1/4c fresh mint leaves
1tsp sea salt
2T olive oil
Blend everything together (ex mint) for 3min or until smooth, then add mint and blend for 15 seconds more. Serve chilled.
