DELIVERING DELECTABLE DISHES DAY & NIGHT!

My immediate family has dealt with lactose intolerance, IBS, auto immune disorders and fatal cancer. From Fall '09-Summer 2010 I went from running 1/2 marathons to not being able to get out of bed, plagued with intense headaches, exhaustion and more. With my family history and my own immune system comprimised I was motivated to take a bit of a journey to better health. Slowly I've made considerable changes, (I'm not always 100% vigilant), but I know these changes have helped me return to better health...FOOD CHANGES: I cut out gluten, cut out most dairy, cut down on the "white stuff"-sugar, white rice & flour, decreased the amount of processed foods consumed, drink green smoothies regularly, eliminated red meat and eat more vegetarian and vegan dishes...just to name a few!

I use gluten free (GF) pasta and either a whole grain blend by Nalani Brown or a mix from Kathy Taylor for most bread, cake and cookie recipes-they are awesome! (If you like Kathy's mix, email me to order her cookbook at ishagirlclub@gmail.com.)

GF mix can be substituted straight across for regular flour if you aren't cooking gluten free!

Lime Honey Marinade

1/4c EVOO
1/4c freshly squeezed lime juice (about 2 limes-don't forget to zest before you use the reamer!)
2 T honey
1/2 tsp cayenne pepper
1 tsp sea salt
1 tsp pepper, freshly ground
2 lbs chicken

1. In large ziplock bag combine all the ingredients then add chicken seal well and leave in fridge overnight.

2. Take chicken out of fridge 15-30min before grilling, grill and enjoy.

Chicken Fajita Marinade

1/3c lime juice
1T olive oil
2 cloves garlic, minced
1T agave
1T Worcestershire sauce
1T cilantro, finely chopped
1/2tsp cumin

combine and marinate chicken for at least 2 hours in the refridgerator.

1. Slice chicken into thin slices. Cook until no longer pink in 1tsp hot olive oil in skillet.  Add red onions sliced thin and long and red, green & yellow peppers also slice thin and long.

2. Serve in warmed tortilla with shredded cheese, sour cream etc OR for a dairy free/wheat free option serve over brown rice with some homemade guacamole!

Tamari-Lime Marinade (GF)

1/2c onion, diced
1T garlic, minced
(puree the two above ingredients then combine with below)
1/4c olive oil
2T tamari sauce (wheat free)
juice of 1 lime
1T ground cumin

Tastes really good on grilled lamb chops or pork tenderloin...like to serve it with the mango salsa and jasmine rice.

Easy Overnight Party Marinade (GF)

1 Sam's Club Frozen Chicken bag

Marinade:
2c 7up
1/2c tamari (WHEAT FREE)
1/2c olive oil
1tsp garlic powder
1tsp Horseradish (I didn't have and used horseradish mustard and it worked as well)

1- Open Sam's Club bag. Add all above ingredients. Put into fridge overnight.

2- Rotate in the morning and throughout the day. (If breasts are super thick, cut in the morning.)

3- Take out approx 1hr before grilling.

Cardey Terriyaki (GF)

1 clove garlic, minced
1T brown sugar
1/2tsp ground ginger
1/2tsp pepper
1T oil
2T water
1/4c Soy sauce (I use Wheat freeTamari)

Pierce meat of choice several times. Combine all ingredients and marinade for 6-24hrs rotating every once in awhile. Make sure meat is room temp before grilling.

Meat: 3-4lbs beef roast cut into 2in squares or 6 breasts of chicken
