Crust:
2c flour
1/2c powedered sugar
1c butter, softened
pinch salt
1- Combine dry ingredients, cut butter into until course meal forms. Pat into greased 8x8 or 9x13 pan. Bake 350 for 20min or so.
Filling:
4 eggs
1-3/4c sugar
6T lemon juice (fresh is best!)
1/4c flour
1/2tsp baking powder
1- Beat eggs, add sugar gradually. Add lemon juice then stir in dry ingredients.
2- Pour onto crust and bake for 20-25more minutes. Sprinkle with powdered sugar.
